The wine created at Moshulu Estate is grown from our single vineyard and reflects the sought after qualities of the best in cool climate wine from the Geelong region.
Each year Moshulu has produced a distinctive style wine with varying flavours from spice and pepper to plums & chocolate. With the variation in weather patterns over recent years the ability to produce a wine which maintains the Moshulu signature, but has definite vintage characteristics, has been challenging and exciting for all involved.
Understanding the effect of varying seasons on our vineyard has been vital to ensure the soil, plants and berries are at maximum potential for vintage. Handpicked fruit into small buckets and gentle over-vat destemming has proven to increase the quality of wine through the fermentation process.
Patience along side traditional proven wine making techniques are used throughout the fermentation process, preserving the varietal flavours, colour and characteristics of the vintage. Basket Pressing is essential in our process allowing us to extract additional juice gently, intensifying colour and achieving greater softness, depth and character.
After pressing, the wine is racked into premium French oak barrels, for maturation which promotes flavour and complexity to the wine, enhancing the rich texture and aromatic features.
Bottling occurs when the wine is at optimum maturity, between 18 months to 2 years. Each year has distinctive seasonal conditions, making each vintage a living record in a bottle. A wine made with passion, patience and the wine makers respect for where it all begins “the berries”. This is Moshulu signature wine.
